My features this week included a Bacon, Onion and Spinach Naan Pizza from Live From Julie’s House, Spicy Fish Tacos with Salsa Fresco and Chipotle Mayo from Alisha Enid, and Pineapple Bars from Winnie at Something Sweet Winnie’s Blog. If I could, I would have made them all right here, and likely have eaten them all right here, but in the end my sweet tooth won out! 
Pineapple Bars
I was so excited to try these pineapple bars – looking at them makes you want to take a bite! Winnie has a wide variety of recipes that I can’t wait to try such as her baked apples stuffed with cheesecakethree flavor eclair cake, and her apple cinnamon rolls. Really, she has enough on her site to keep me busy for a long time! 
Her blog is not written in English, but the recipes (scroll down the page) are fully translated and easy to read. 
These pineapple bars are divine and remind me of warmer weather! They are a bit time consuming but well worth the effort. 

The shortbread crust is buttery and a perfect accompaniment to the fruity center and sweet topping. 


They make quite a large batch and are perfect for your upcoming picnics and potlucks. Be sure to bring a cool pack as they do require refrigeration. 

I used a piping bag to drizzle the glaze because I’m fancy an overachiever like that but you could easily drizzle with a spoon. 

Very tasty! Thank you to Winnie for a wonderful recipe!

      Thanks April! I'm so glad I did, too! She has so many I can't wait to try.. I'm not sure I need to eat all of them.. I've had three pineapple bars today alone. I had to send them with Shay to work!
