Okay, it’s been HOT. Like Arizona-in-the-summer-only-in-Virginia hot, which equates to not wanting to turn on the oven or any other source of heat. Being hot just throws everything off for me from food to sleep, but luckily, I had three yummy recipes to help put me back on the right track! 

Of course, it’s not Girl Scout Cookie season right now. But it’s always Keebler Grasshopper season! 

It doesn’t get much easier than mixing it all up and pouring it into a pie shell! Marilyn’s recipe calls for Creme de Menthe liqueur  which gives this pie both it’s color and it enhances the minty taste. 

Marilyn’s recipe also includes a pie crust recipe – very simple. I was short on time so used a ready made crust instead. I really think the homemade crust would be even better, so if you can spare the 5-10 minutes it would take to make it, do so! 

I made my own fudge using a simple recipe of 1 can of sweetened condensed milk and 1.5 cups of dark chocolate chips. Microwave the milk and chips together for 1-2 minutes and mix well. Yum! 

Drizzle with homemade fudge sauce and sprinkle with thin mint or grasshopper cookie crumbs before refrigerating for a few hours. Then serve up a delicious, light tasting and cool dessert!

My dear friend, April, (who I get to see in just a few weeks! SO excited!) made a Moscow Mule this week. I’ve never had one but I think I’m going to have to change that!
